Almond Butter Delicious Cookies

These almond butter cookies are easy to make, naturally gluten-free, and deliciously soft and chewy. Perfect for a quick snack or a guilt-free treat!


Ingredients

  • 1 cup (250g) almond butter (smooth or chunky)
  • ¾ cup (150g) coconut sugar or brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • Optional: ½ cup (90g) dark chocolate chips or chopped nuts

Instructions

  1. Preheat the Oven:
    Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

  2. Mix the Ingredients:
    In a large bowl, combine the almond butter, coconut sugar, egg, vanilla extract, baking soda, and salt. Mix until smooth and creamy. If you’re using chocolate chips or nuts, fold them into the dough.

  3. Shape the Cookies:
    Scoop about 1 tablespoon of dough and roll it into a ball. Place on the prepared baking sheet and flatten slightly with the back of a spoon or your palm. Leave some space between the cookies as they will spread a little.

  4. Bake:
    Bake in the preheated oven for 8–10 minutes, or until the edges are lightly golden. The cookies will still be soft when you take them out—this is normal!

  5. Cool Down:
    Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.


Tips:

  • For a sweeter twist, drizzle melted chocolate over the cooled cookies.
  • Store in an airtight container at room temperature for up to a week.
  • For a vegan option, replace the egg with a flaxseed egg (1 tablespoon ground flaxseed mixed with 2.5 tablespoons water).
